dads pancakes

This is my dads take on Swedish pancakes (crepes)

ingredients

  • 6 eggs

  • 6 dl 2 ½ cups Flour mixture (half all purpose, half whole wheat)

  • 12 dl 5 cups Milk

  • a pinch of salt

  • 75 g ¾ stick Butter + some for frying

toppings

Sweet

  • Jam (my dads favorite is lingon berries)

  • Whipped cream 

  • Berries

  • Maple syrup

  • Butter, sugar and cinnamon

  • Nutella

 

Savory

  • Tomatoes

  • Onion

  • Cheese

  • Mushrooms

  • Smoked Lax

  • Ham

makes 20-30 pancakes

assembly:

  1. Mix flour, eggs,milk and salt. Whisk until there are no more flour "bubbles". 
     

  2. Melt the butter in a large pan, quickly whisk it into the mixture.
     

  3. In the same large pan fry the pancakes by covering the pan in 1mm pancake batter.  Flip when the mixture sets. If you're having issues with the pancakes sticking to the pan, either wait a while or add some more butter. Mix the pancake batter between pancakes.
     

  4. Eat the first pancake since it never works out.
     

  5. Enjoy. Leftovers can be stored on a plate and then covered in clingfilm.

If you want to make savory crepes

  • As soon as you flip the pancake add a bit of cheese and the other ingredients. 
     

  • Roll it up once the other side is done. It might be smart to turn down the temperature a bit if the ingredients don't get cooked cooked trough.

ps you can make pancake cake by layering pancakes with jam, whipped cream and berries.
