my go-to dhal

dhal is a traditional Indian legume stew, often made with lentils. This recepie is based on Icas dhal recipe with some some small modifications. I've been able to find the ingredients in all countries I've lived in.

ingredients

  • 2 tbsp Vegetable oil

  • 1 Onion

  • 2 Carrots

  • 4 Garlic cloves

  • 1 tbsp Finely chopped ginger

  • ½ tsp Ground cumin

  • 1 tsp Coriander

  • 1 pinch Cinnamon

  • 1 tbsp Tomato paste

  • 1 Vegetable bouillon cube

  • 2.5 dl 1 cup Dried red lentils

  • 1 can (400 ml) Crushed tomatoes

  • 1 can (400 ml) Coconut milk

  • 3.5 dl 1 ¼ cup Water

  • Salt and pepper

  • ½ Lime

extra for taste

  • Chilli powder

makes 4 portions

assembly:

  1. Peel the onion, carrots, garlic. Dice the onion and carrots and finely chop the garlic and ginger.
     

  2. Heat  oil in a medium pot set to medium-high heat. Cook the onion, carrots and garlic until staring to brown.
     

  3. Add the ginger, cook for 30-60 sec.
     

  4. Add the herbs, tomato paste, vegetable bouillon, lentils, crushed tomatoes, coconut milk and water.
     

  5. Cook on a low simmer for 30min or until the lentils cooked through.
     

  6. Add salt, pepper and lime to taste.
     

  7. Serve with rice and naan.
