french pasta sallad

I think this is originally a finnish recipe but I don't really know where its from, and for some reason I've been calling it french.

I usually skip both the olives and mushrooms, but they both really add to the dish.

ingredients

  • 500 g 1lb Pasta

  • 4 Champignon or monterey mushrooms

  • 150 g 5oz Grana padano 

  • 2 Medium red onions

  • 75g 3oz Sundried tomatoes

  • 60g 2oz Pitted kalamata olives

  • 3 tbsp Balsamic vinegar

  • 1 tbsp olive oil

  • 150 g 5oz Ruccola/arugula 

makes like 5 portions

assembly:

  1. Heat water in a large pot, add plenty of salt.
     

  2. While the water is heating, add some olive oil to a medium skillet. Chopp and brown the mushrooms.
     

  3. Chop the onions into small pieces. Finely chop the grana padano and sun dried tomatoes.
     

  4. Boil the pasta to just past al-dente.
     

  5. Strain and add the pasta back into the pot. Instantly add everything except the grana padano and ruccola. Mix everything together.
     

  6. After a while add the grana padano.
     

  7. When the pasta has cooled down, add the ruccola. Mix everything while adding some salt and pepper.
     

  8. Serve. Any leftovers make perfect lunchboxes.
