french pasta sallad
I think this is originally a finnish recipe but I don't really know where its from, and for some reason I've been calling it french.
I usually skip both the olives and mushrooms, but they both really add to the dish.
ingredients

500 g 1lb Pasta

4 Champignon or monterey mushrooms

150 g 5oz Grana padano

2 Medium red onions

75g 3oz Sundried tomatoes

60g 2oz Pitted kalamata olives

3 tbsp Balsamic vinegar

1 tbsp olive oil

150 g 5oz Ruccola/arugula
makes like 5 portions
assembly:

Heat water in a large pot, add plenty of salt.

While the water is heating, add some olive oil to a medium skillet. Chopp and brown the mushrooms.

Chop the onions into small pieces. Finely chop the grana padano and sun dried tomatoes.

Boil the pasta to just past al-dente.

Strain and add the pasta back into the pot. Instantly add everything except the grana padano and ruccola. Mix everything together.

After a while add the grana padano.

When the pasta has cooled down, add the ruccola. Mix everything while adding some salt and pepper.

Serve. Any leftovers make perfect lunchboxes.
